Video Production: What is the job outlook for video production and video editors?

At the high end there will always be a need for specialization.  It's the mid-level jobs that are disappearing and leaving only room for the "producer-director-videographer-editor" who is likely working for a subsistence level wage by the time all is said and done...

The trick will be how to get from one of those low paying "one man band" jobs to the top level.... Good luck!
